Ali Waks Adams, Chef/Owner.
I began my professional career in the theater, moving on to the event/trade show business. No Matter what I was doing for work, I loved to cook and feed people! 25 years ago, I took the plunge and began working in food – and have been going strong ever since. I’ve fed so many people in Brunswick, whether at my first pop-ups at Butter & Salt, dinners at The Brunswick Inn (now 165 Park Row), my Pandemic Pop-up Willie & Chet’s out of Dog Bar Jim, through events for Maine Health or MCHPP, plus a multitude of private parties, weddings, and memorials. I love seeing the familiar faces at the farmers’ market or Hannaford! I am on the board of MCHPP and live in Brunswick with my husband, two cats, and two birds.
Brunswick reminds me of the town I grew up in on Long Island. Believe it or not but way back then East Hampton was a lovely town full of artists and fishers and farmers! I just fell in love the first time I came up here, and when my father passed away and I was looking for a home and place where I could find joy and smell the ocean Brunswick presented itself to us, 12 years later we are still here.
I think it would surprise people to know the origin of our name Balaboosta – it’s a term for a woman who makes things nice, one who cooks with love and care, sets a beautiful table and provides a warm comfortable space. We couple that with our logo a matushka nesting doll, she symbolizes the knowledge that is inside me from generations of Balaboostasin my family.
It always changes! We are doing a fabulous holiday party for a construction company here in in town with a Philly style Sandwich bar that’s super fun and a Ukrainian Wedding which also had a gorgeous menu with a Ukrainian charcuterie full of sausage, pickles, smoked fish and garlic cheese – plus potato varenky, pork loin with sour cherries, roast chicken with Creme fraiche and garlic confit.
Tuesday farmers’ Market!
