Over the years the Maine lobster has gone from a “poverty food” in colonial times to being an internationally desired protein prepared lovingly by the world’s most renowned chefs. The Maine legacy of hard work and independence is infused into every step of lobster processing and is Yankee ingenuity at its finest.
Join John Hathaway, owner of Shuck’s Maine Lobster, for a talk on the historical evolution of lobster processing and their current operations. Hathaway’s business processes thousands of lobsters every year and is a Maine Certified Sustainable Seafood product recognized on the floor of the Senate by Senator Olympia Snow.
